SALMON Smoked salmon depends essentialy upon the process applied by the manufacturer, from the moment of its arrival to its final presentation. Our selected salmon comes from privileged surroundings and partly free-range Norwegian fish farmas, where feed and growth are constantly monitored by specialists. Each mature, stout salmon chosen weighs over 10 kilos. Whole speciments always reach our installations fresh and gutted, so as to keep quality under strict control.The careful and traditional process begins by washing and separating the spine from the fillets, followed by its dehydratation with a knowledgeable mix of salt and sugar in order to begin caramelization.Finally, the salmon acquires its unique smoked taste through natural techniques using carefully selected wood chips.
